- 1 kg raw mangoes (preferably Rajapuri)
- 1 kg jaggery (grated)
- 50 grams red chili powder
- 50 grams Kashmiri red chili powder
- 100 grams coriander seeds (crushed)
- 50 grams mustard seeds (crushed)
- 25 grams fenugreek seeds (crushed)
- 25 grams fennel seeds
- 10 grams turmeric powder
- 10 grams dry ginger powder
- 10 grams asafoetida
- 10 grams salt
- 80 grams oil
How to Make Gol Keri Nu Athanu Recipe
Step 1: Preparing the Mangoes
- Wash the raw mangoes thoroughly and dry them with a clean cloth.
- Cut the mangoes into medium-sized pieces, removing the seeds.
- Mix the mango pieces with half a teaspoon of turmeric powder and one and a half teaspoons of salt. Cover and set aside for 2-3 hours.
- After the resting period, drain the water released by the mangoes and spread the pieces on a clean cloth to dry for 6-7 hours or overnight.
Step 2: Preparing the Spice Mix
- In a large mixing bowl, combine the red chili powder, Kashmiri red chili powder, crushed coriander seeds, crushed mustard seeds, crushed fenugreek seeds, fennel seeds, turmeric powder, dry ginger powder, asafoetida, and salt.
- Heat the oil in a pan until it starts to smoke, then let it cool slightly.
- Pour the warm oil over the spice mix and stir well to combine.
Step 3: Mixing the Pickle
- Add the grated jaggery to the spice mix and stir until well combined.
- Add the dried mango pieces to the mixture and mix thoroughly, ensuring all pieces are well coated with the spice mix.
- Transfer the pickle to a clean, dry jar and cover it with a lid. Let it sit for 4-5 days, stirring the pickle twice daily to ensure even mixing.
