- 1 tsp fruit salt (Eno)
- Salt to taste
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tbsp sesame seeds
- A pinch of asafoetida (hing)
- 10-12 curry leaves
How to Make Rava Handvo

- Prepare the Batter: In a large mixing bowl, combine rava, grated bottle gourd, grated carrot, yogurt, water, ginger-green chili paste, turmeric powder, and salt. Mix well and let it rest for 15-20 minutes.
- Add Fruit Salt: Just before cooking, add fruit salt to the batter and mix gently. This will help the handvo to rise and become fluffy.
- Prepare the Tempering: Heat oil in a pan. Add mustard seeds, cumin seeds, sesame seeds, asafoetida, and curry leaves. Let them splutter.
- Cook the Handvo: Pour the batter into the pan and spread it evenly. Cover and cook on low flame for 10-15 minutes or until the bottom is golden brown. Flip and cook the other side until it is also golden brown.
