Sabudana papad is a popular Indian snack made from tapioca pearls (sago). It is a crispy and savory papad that is enjoyed during festivals or as a tea-time snack. Here’s a brief overview of the sabudana papad recipe:
- Soak the sabudana: Rinse the sabudana under running water until it becomes clear. Soak the sabudana in water for about 7-8 hours or until they become soft. Drain any excess water.
- Prepare the batter: Take the soaked sabudana in a mixing bowl and add salt, ginger & green chilly paste and cumin powder. Mix well to ensure the spices are evenly coated on the sabudana. On a medium flame add water as required & keep stirring continuously to form a thick and smooth batter until the sabudana becomes transparent.
- Making papads: Take a small portion of the batter and spread it on a plastic sheet in a thin, circular shape. Continue the process until all the papads are evenly spread on the plastic sheet. Now let it dry for about 2-3 days under the fan or under the sunlight.
- Frying the papads : Transfer the papads to the hot oil and fry them until they turn golden brown and crispy. Flip them occasionally for even frying. Once crispy, remove them from the oil and place them on a kitchen towel to absorb excess oil.
- Cool and store: Allow the sabudana papads to cool completely before storing them in an airtight container. Store them in a dry and cool place to maintain their crispiness.

Ingredients used to prepare Sabudana Papad Recipe:
- Soaked sabudana – 750 gms
- Ginger & Green chilly paste – 02 tsp
- Salt – 1 1/2 tsp
- Cumin Seed – 02 tsp
- Water – 1.5 cup
Instructions for preparing Sabudana Papad Recipe :
- Rinse the sabudana in water and soak it in enough water to cover it for 7-8 hours. Drain any excess water and set it aside.
- Heat the Vessel, add the soaked Sabudana, also add water as per measurement mentioned, add salt cumin seed & ginger and green chilly paste and keep stiring on a medium flame until the sabudana turns transparent.
- Keep checking the sabudana in between the intervals to avoid the stickiness in sabudana.
- Once the Sabudana turns transparent switch off the gas flame.
- Form a nice mixture of the sabudana, the Big spoon stand still in the mixture then your consistency is perfect for making papads. So be aware of that while making the mixture.
- This process should be done only in the time when sabudana are hot & not when it cools down.
- Now the mixture is ready, Take a small portion of the batter and spread it on a plastic sheet in a thin, circular shape. Continue the process until all the papads are evenly spread on the plastic sheet.
- Once all the papads are properly placed in the plastic sheet let it cool down for about 2-3 days in the sunlight or even at your home but ensure that you give the sunlight for minimum 01 day so that it becomes well dried.
- After the days of drying the papads, you can store them in a container for about 06-12 months.
- For frying the wafers, heat the oil in a pan over high flame.
- Carefully place the sabudana papads in the hot oil and fry them until they turn golden brown. Flip them over occasionally to make sure they cook evenly on both sides.
- Once they are crispy and golden brown, remove the papads from the oil using a slotted spoon and drain them on paper towels to remove excess oil.
- Repeat the process with the remaining papads.
- You can fry these wafers occationally or whenever you crave for the same.
- Serve the sabudana papads with hot cup of Tea it taste delicious!!
