What is Farali Handvo Recipe ?

Farali Handvo is a traditional Indian dish that originates from the state of Gujarat. It’s a type of savory cake or pan-fried pancake that is specially prepared during fasting periods, particularly during festivals like Navratri or other religious occasions where certain food restrictions are observed. The term “farali” refers to food that is allowed during fasting, adhering to specific dietary guidelines.

The uniqueness of Farali Handvo lies in its composition of flours suitable for fasting. Regular flours like wheat and lentil are replaced with fasting-friendly alternatives like amaranth flour, barnyard millet flour, and water chestnut flour. These flours are mixed with grated vegetables such as bottle gourd (lauki), carrot, and sometimes zucchini. This mixture is combined with yogurt (curd), ginger-green chili paste, cumin seeds, and other seasonings to create a batter.

The batter is left to ferment for a short duration, leading to a slight rise in the batter’s volume. This is followed by the addition of a leavening agent like fruit salt (eno) or baking soda to help the handvo rise further while cooking.

The batter is then pan-fried with a tempering of mustard seeds, sesame seeds, asafoetida, and curry leaves, which infuses the handvo with aromatic flavors. The handvo is cooked on both sides until it turns golden brown and is cooked through.

Farali Handvo is known for its appealing combination of textures and flavors. It’s soft on the inside and crispy on the outside due to the pan-frying method. The grated vegetables lend moisture and nutrition to the dish, while the spices and tempering provide a burst of taste.

It’s often served with yogurt or fasting-friendly chutneys, contributing a satisfying and wholesome meal during fasting days. The recipe might vary slightly based on individual preferences and regional variations, but the essence of Farali Handvo remains consistent: a delicious and nutritious fasting dish that’s enjoyed during special occasions.
