Gujarati mixed vegetable dish called Surti Undhiyu is a local delicacy of Surat, India. This dish’s name derives from the Gujarati word “undhu,” which means “upside-down,” because it is typically prepared upside-down underground in earthen pots called “matlu” that are heated from above. Being a Gujrati, I grew up with Undhiyu as a special dish for which we had to wait all year until the winters began, and we would still only get to enjoy this vegetable for a few months at a time. However, thanks to technology, all of the veggies used for undhiyu are readily available for three to five months now. How to make Undhiyu at Home Recipe is relatively simple.

- Potato – 250 gms
- Baingan – 250 gms
- Tomato – 02 pcs
- Jaggery – 03 tsp
- Turmeric – 1/2 tsp
- Corriander cumin powder – 02 tsp
- Red Chilly Powder – 02 tsp
- Garlic Paste – 02 tsp
- Groundnut oil – 08 tsp
- Salt – 01 tsp
- Asafoetida (Hing) – 1/2 tsp
Ingredients used to prepare Methi Dhokli
- Besan – 250 gms
- Methi Paan – 01 bowl
- Lemon Juice – 1/2 pc
- Sugar – 02 tsp
- Turmeric – 1/4 tsp
- Corriander Cumin Powder – 01 tsp
- Groundnut oil – 04 tsp
- Salt – 1/2 tsp
- Asafoetida (Hing) – 1/2 tsp

- Please ensure that methi muthia mixture is slightly sticky as the result will be softer.
