What is Milk Burfi Recipe ?

Milk burfi is a classic Indian sweet made from a few simple ingredients – milk, sugar, and ghee (clarified butter). This delicacy is created by cooking down milk until it thickens and transforms into a dense, fudge-like consistency. The addition of sugar imparts sweetness, while ghee contributes richness and depth of flavor.

To prepare milk burfi, the milk is simmered until most of the moisture evaporates, leaving behind a concentrated milk solids mixture. Sugar is then added, causing the mixture to loosen briefly before thickening again as it cooks. Ghee is introduced, enriching the mixture and helping it pull away from the sides of the pan.

Cardamom powder often joins the mixture, infusing the burfi with its signature aromatic essence. Once the mixture reaches the desired consistency, it’s spread in a pan, garnished with chopped nuts like almonds or pistachios, and left to cool and set. The final result is a smooth, velvety treat that’s sliced into squares or diamond shapes for serving.

Milk burfi is a cherished dessert in Indian cuisine, commonly enjoyed during celebrations, festivals, and special occasions. Its creamy texture, comforting flavor, and cultural significance make it a beloved part of traditional sweets.

Ingredients used to prepare Milk Burfi Recipe :

  • Milk (full fat) – 1.5 litre
  • Sugar – 250 gms
  • Pistachios – 01 tsp
  • Almonds – 01 tsp
  • Cashew – 01 tsp
  • Desi ghee – 02 tsp

Instructions for preparing Milk Burfi Recipe :

  1. Prepare the Pan and Grease: Grease a square or rectangular pan with a little ghee and set it aside. This will be used to set the burfi.
  2. Prepare the Milk Mixture: In a heavy-bottomed pan, add the milk and bring it to a simmer over medium heat. Once it starts simmering, reduce the heat to low.
  3. Cook the Mixture: Keep stirring the mixture on low heat. It will start to thicken and come together as a dough-like consistency.
  4. Add Sugar: Add the sugar in 3 half intervals to the mixture and continue to stir. The mixture will start to loosen up again due to the sugar, but keep stirring until it thickens once more.
  5. Flavoring: Add the cardamom powder to the mixture and mix well. This will give the burfi a delightful aroma and flavor.
  6. Transfer to the Pan: Once the mixture reaches a thick, fudge-like consistency and starts to leave the sides of the pan, quickly transfer it to the greased pan. Flatten and smooth the surface with a spatula.
  7. Garnish: While the mixture is still warm, sprinkle the chopped nuts on top and gently press them down so they stick to the burfi.
  8. Allow to Set: Let the burfi cool down to room temperature. You can also place it in the refrigerator to speed up the setting process.
  9. Cut and Serve: Once the burfi is completely set, use a sharp knife to cut it into desired shapes – typically squares or diamonds. Gently remove the pieces from the pan.

Your delicious milk burfi is ready to be enjoyed! Store the burfi in an airtight container at room temperature or in the refrigerator, especially in warmer climates. It can be served as a sweet treat for festivals, celebrations, or just as a delightful dessert.
