What is Thandai?

Thandai is an Indian cold drink prepared with a mixture of almonds, fennel seeds, watermelon kernels, rose petals, pepper, poppy seeds, Fennel Seeds cardamom, saffron, milk and sugar. It is native to India and is often associated with the Maha Shivaratri and Holi or Holla mahalla festival.

For Holi, bhang (the leaves and flower heads of cannabis) in little amount is added to thandai but my version is minus the bhang since this is what we were allowed to drink when we were kids. No getting high for us!

Thandai is made using a number of nuts and spices which are said to have a cooling effect on the body and hence the name “Thandai”, which in Hindi means “cooling”.

The use of peppercorn, almonds, fennel seeds, poppy seeds along with saffron, cardamom and rose water makes thandai a very refreshing and delicious drink. It’s a great drink to serve to especially during summers in India.

Ingredients used to prepare Thandai recipe:

  • Soaked Almond – 100 gms
  • Soaked Cashew – 50 gms
  • Soaked Watermelon Seeds- 50 gms
  • Soaked Saunf – 50 gms
  • Soaked Black Seed – 02 tsp
  • Soaked Khus Khus – 02 tsp
  • Soaked Elaichi – 02 tsp
  • Kesar – 1/4 tsp
  • Sugar – 300 gms
  • Water – 01 cup

Instructions for 3 types of Thandai recipe:

Well most of us prefer the classic thandai recipe, but having multiple flavours and variations is better. from variations and adding flavours perspective, the possibilities are endless and can add almost everything. yet i have only chosen 3 flavours in this post including the classic thandai flavour. the other 2 options i have chosen are Rose and Kesar flavour.

From all the drinks, Thandai, Kesar and Rose milk were always loved. Not only by us, by our friends too. And so I decided to blend these three drinks and make a delicious drink that is great for warm days. You can explore other options like coffee, tea, mango, vanilla, chocolate or any tropical fruits.

But i would still emphasise the fact that these added flavours should not overpower the authentic taste and flavour of the actual drink.

Classic Thandai Recipe :

  • Add Almond, Cashew, Watermelon Seeds, Saunf, Black Seed, Khus Khus, Elaichi & Kesar in a seperate bowls & rinse them well. Then add water & soak them for minimum of 4 hours.
  • Later peel the skin of the Almonds & rinse the nuts with fresh water. Add the soaked & blanched  nuts to a blender/grinder.
  • Drain the water from watermelon seeds & black seed. Add them to the grinder.
  • Same way grind the saunf, khus khus & elaichi alongwith the kesar & make a smooth paste.
  • Now mix all the paste altogether in a bowl,
  • Now for the syrup we need to make a sugar pie. Add sugar in a pan & pour water just to cover the sugar on the top.
  • You need to stir the sugar till it forms a pie & is ready to mix the thandai paste in it.
  • Once the pie is ready mix the paste that we have made of all the nuts & spice masala & let it cool down after then you can store the syrup in a air tight bottle & can have it anytime whenever you crave for the same.

Rose Thandai Recipe :

  • Add Almond, Cashew, Watermelon Seeds, Saunf, Black Seed, Khus Khus, Elaichi & Kesar in a seperate bowls & rinse them well. Then add water & soak them for minimum of 4 hours.
  • Later peel the skin of the Almonds & rinse the nuts with fresh water. Add the soaked & blanched  nuts to a blender/grinder.
  • Drain the water from watermelon seeds & black seed. Add them to the grinder.
  • Same way grind the saunf, khus khus & elaichi alongwith the kesar & make a smooth paste.
  • Now mix all the paste altogether in a bowl,
  • Now for the syrup we need to make a sugar pie. Add sugar in a pan & pour water just to cover the sugar on the top.
  • You need to stir the sugar till it forms a pie & is ready to mix the thandai paste in it.
  • Once the pie is ready mix the paste that we have made of all the nuts & spice masala & let it cool down after then you can store the syrup in a air tight bottle & can have it anytime whenever you crave for the same.
  • Add Rose Syrup in the same Classic Thandai Syrup. You can boil rose petals in a pan & can make homemade rose syrup at home or can just add the ready rose flavour available in the market in the Classic Thandai which we have made at home.
  • So the Classic Thandai is the basic masala made at home & for the flavoured you can just add the flavoured syrup in the thandai.

Kesar Thandai Recipe :

  • Add Almond, Cashew, Watermelon Seeds, Saunf, Black Seed, Khus Khus, Elaichi & Kesar in a seperate bowls & rinse them well. Then add water & soak them for minimum of 4 hours.
  • Later peel the skin of the Almonds & rinse the nuts with fresh water. Add the soaked & blanched  nuts to a blender/grinder.
  • Drain the water from watermelon seeds & black seed. Add them to the grinder.
  • Same way grind the saunf, khus khus & elaichi alongwith the kesar & make a smooth paste.
  • Now mix all the paste altogether in a bowl,
  • Now for the syrup we need to make a sugar pie. Add sugar in a pan & pour water just to cover the sugar on the top.
  • You need to stir the sugar till it forms a pie & is ready to mix the thandai paste in it.
  • Once the pie is ready mix the paste that we have made of all the nuts & spice masala & let it cool down after then you can store the syrup in a air tight bottle & can have it anytime whenever you crave for the same.
  • Add Kesar in the same Classic Thandai Syrup.
  • So your Kesar Thandai is ready you can enjoy every sip of the drink,Kesar thandai is a type of thandai that is made using saffron and milk. It has a rich and creamy texture and is flavoured with a blend of spices like cardamom, fennel, and black pepper.
  • Kesar thandai is a popular drink during the festival of Holi and is often served with a sprinkle of rose petals on top. It is believed to have cooling properties and is said to be beneficial for the digestive system.

Now immediately serve the three different flavoured Thandai Recipe seperately with the chilled milk in a glass with some ice cubes to your friends or relatives.

Also Garnish with the rose petals & kesar on top of the drink & enjoy the delicious mouth wattering drink in this summer for the hot days.
