Vegetables
- 4 small brinjals (eggplants)
- 7 baby potatoes
- 1 raw banana
- 1 cup surti papdi (flat beans)
- 1 cup valor papdi (hyacinth beans)
- 1 cup tuvar lilva (fresh pigeon peas)
- 1 cup sweet potato, chopped
- 1 cup green peas
For Methi Muthia (Fenugreek Dumplings)
- 1 cup gram flour (besan)
- 1 ½ cups fenugreek leaves, chopped
- 1 ½ teaspoons red chili powder
- ½ teaspoon turmeric powder
- 1 pinch baking soda
- 2 ½ teaspoons sugar
- ¾ teaspoon lemon juice
- Salt to taste
- 1 tablespoon oil (plus more for deep frying)
For Masala
- ¼ cup grated coconut (fresh or dry)
- ⅓ cup roasted peanut powder
- ½ tablespoon sesame seeds
- ¼ cup coriander leaves, finely chopped
- ½ tablespoon green chili ginger garlic paste

How to Make Undhiyu recipe
Step 1: Prepare the Methi Muthia
- In a bowl, mix gram flour, fenugreek leaves, red chili powder, turmeric powder, baking soda, sugar, lemon juice, salt, and oil.
- Knead into a dough and shape into small dumplings.
- Deep fry the dumplings until golden brown and set aside.
Step 2: Prepare the Masala
- Combine grated coconut, roasted peanut powder, sesame seeds, coriander leaves, green chili ginger garlic paste, and salt in a bowl.
- Mix well to form a coarse masala.
Step 3: Prepare the Vegetables
- Wash and cut the vegetables as mentioned.
- Stuff the brinjals and raw banana with the prepared masala.
